Rosemary Garlic Rack of Lamb with Roasted Potatoes and Sauteed Spinach

Lamb is one of my favorite things to cook. So whenever it is on sale I typically purchase it. Around the holidays, racks of lamb was on sale. So I decided I would buy some and freeze it for later. Last Sunday ended up being a good day to roast it. I seasoned my lamb with some olive oil, garlic rosemary, thyme, and salt. I was supposed to sear the rack before I put in the oven to roast but got distracted with helping my son with a craft project and forgot. It turned out fine though just didn’t have a nice crispy outside skin. I served my lamb chops with roasted potatoes and sauteed spinach. The potatoes were prepared using olive oil, rosemary and garlic. The spinach was just sauteed in butter. The overall finished product was amazingly tasty.
